Oaty Nutty Bikkies! These guys are just the easiest thing to make and are incredibly moreish… so if you’re on a diet, skip this. But they are pretty healthy things all the same, and beat hands down anything you can buy in the supermarket…
Oaty Nutty Ingredients:
110grams or ½ cup butter
2 tablespoons good honey (I use Tassie Leatherwood which is the bomb!)
1 teaspoon baking soda
110grams or 1 cup plain flour
100 grams or 1 and ¼ cups of rolled oats
½ cup of chopped nuts – peanuts, walnuts, pecans, whatever takes your fancy or you have in the pantry
½ cup of raw sugar
And sometimes I add an egg, whisked, to the mix, if I want them soft and chewy.
Oaty Nutty Method:
Melt the butter and honey together on low heat (you can do this in the microwave in short bursts and stirring in between). Remove from the heat and add the baking soda.
Mix together the flour, oats, nuts and sugar in a bowl and stir in the butter and honey mixture until well blended.
Line a tray with baking paper and place 12 equal heaps of the mixture on the surface, flatten them down a little.
Bake in 180degrees C hot oven for 12 – 15 minutes until golden. Cool on the tray for 5 minutes, then slide the biscuits onto a rack to cool.
