White Christmas with pine cones
“There are stocking stuffers, and there are tummy stuffers, and this Xmas slice is quick, delicious and healthy! Why, because it has fruit of course!
I call the addition of pine cones, replacing the usual rice bubbles with cocoa pops, a joyous addition.
Ingredients:
500 grams white chocolate
2 tbsp. of cream
1 cup desiccated coconut
1.5 cups cocoa pops
½ cup chopped dried apricots
1 cup scorched almonds rough chopped
150 grams dried cranberries
150 grams glace cherries
Melted dark chocolate for piping on top
Method:
Melt chocolate and cream together, add all other ingredients into a bowl and mix to combine. Line a 20×28 cm slice tray with baking paper. Mix chocolate into the dry ingredients and pour into the slice tray levelling out. Put melted dark chocolate into a disposable piping bag, or a clean Ziplock bag. Drizzle over the top of the slice to decorate, then refrigerate for 2 hours to set. Cut into portions and keep in an airtight container in a cool place, careful now, I’m counting those portions, there’s 2 missing!
